Black Walnut Pumpkin Pie

1 1/2 cups cooked or canned pumpkin
1 1/2 cups milk
2 eggs, beaten
1 cup honey
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. nutmeg
1 tsp. cinnamon
1/2 cup chopped black walnuts
9-inch unbaked pie crust with high sides

Comine pumpkin, milk, and eggs. Stir in honey, salt, spices, and black walnuts. Pour into pie crust and bake in a very hot oven (450 degrees) for 10 minutes. Turn down heat to moderate oven (350 degrees) and bake until filling is firm in center - about 40 minutes. Top with whipped cream when cool.

Instant Shrimp Creole

Saute 1/4 cup chopped onion and 3 Tbsp. chopped green pepper in 1 tsp. oil until tender but not brown. Add 16 oz. spaghetti sauce with mushrooms and 2 tsp. lemon juice; heat until boil. Add 2 cups or 1 lb. cooked shrimp and heat about 3 minutes. Serve over rice.

Corned Beef 'N' Cheese Sandwiches

12 oz. can corned beef, crumbled
4 tsp. chopped onion
1 Tbsp. plus 1 tsp. chopped dill pickle
1/4 to 1/2 tsp. hot pepper sauce
1/2 cup catsup
1 1/2 cups diced American cheese
12 hamburger buns

In 3-quart bowl combine all ingredients except hamburger buns; mix well. Spoon about 1/4 cup of mixture into hamburger buns. Wrap each in foil, place on baking sheet. Bake at 350 degrees for 18 to 22 minutes.

Tapioca Pudding

1 cup tapioca soaked overnight in 1 pt. of warm water. In morning add 1 qt. of milk and boil about 20 minutes stirring gently. Then add 2 eggs well beaten, 2 cups sugar, butter and salt and allow to boil a few minutes longer. Add 1 tsp. vanilla.

Rhubarb Bread Pudding

4 cups diced rhubarb
3 1/2 cups bread cubes
1 1/2 cups sugar
1/2 tsp. nutmeg
1/2 tsp. cinammon
1/4 cup chopped nuts
1/4 cup melted butter

Mix together all ingredients. Turn into greased two-quart casserole dish. Bake at 375 degrees for 45 minutes.

Fried Round Steak with Cream Gravy

Pound 3 Tbsp. flour into 1 lb. round steak. Salt and pepper to taste. Cook on high heat in 3 Tbsp. hot oil. Into drippings stir 2 Tbsp. flour, 1/2 cup water then 1 cup milk. Stir until thickened. Serve gravy over meat and mashed potatoes.

Fruit Cocktail Eggnog Pie

1 can fruit cocktail
1 envelope unflavored gelatin
1 1/2 cups prepared eggnog
1/8 tsp. salt
1 1/2 tsp. vanilla
1/4 tsp. almond extract
1 cup whipping cream
1 9-inch baked pie shell

Drain fruit well, measure 1/2 cup of syrup. Stir gelatin into syrup. Set over boiling water, stir to dissolve. Remove from heat, stir into eggnog. Add salt, flavorings. Chill until mixture mounds when dropped from spoon. Whip cream. Fold into gelatine mixture with 1 1/2 cups well-drained fruit cocktail. Chill again 5 to 10 minutes, until mixture mounds. Heap into baked cooled pie shell. Chill 2 to 4 hours. Decorate with remaining fruit before serving.

Wilted Lettuce Salad

Fry 6 slices of bacon - leave 1/4 cup drippings in pan. Tear 1 head of lettuce into bite size in bowl - add bacon and onion slices and mix. In drippings stir 1/4 cup vinegar, 1 1/2 tsp. sugar, 1/2 tsp. dry mustard, 1/4 tsp. salt, and a dash of pepper. Heat over medium heat until boiling. Remove from heat and add lettuce until coated with dressing.

Uncooked Vegetable Relish

2 medium heads of cabbage
8 medium carrots
4 green peppers
4 red peppers
8 small onions

Grind and add 1/2 cup salt and let stand overnight. Drain next day and cover with 3 pints of vinegar, 1 tsp. celery salt, 1 tsp. mustard seed, 6 cups sugar. Not necessary to seal.

Cranberry Salad

2 pkgs. Jello
3 cups water
1 can whole cranberries
1 orange
1 can pineapple
1 cup walnuts

Dissolve jello in 1 cup hot water, add 2 cups cold water, cranberries, nuts, orange, and pineapple cut in pieces. Mold and stir once.

Dressing:
1 pkg. cream cheese beaten fluffy with pineapple juice from canned pineapples.

Pumpkin Pie

4 eggs, lightly beaten
1 can (29 oz.) Pumpkin
1 1/2 cups sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
3 cups (2 - 12 oz. cans) undiluted evaporated milk
2 9-inch "deep dish" pie crusts or 4 9-inch shallow pie crusts

Combine filling ingredients in order given; pour into pie crusts. Bake in preheated 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and bake an additional 40 to 50 minutes until done. Cool.

When using metal or foil pie pans, bake pies on preheated cookie sheet for a more evenly baked crust. Cookie sheet is not necessary when using glass or ceramic pie pans.

Sliced Cukes

3 medium cukes
3/4 tsp. salt
1/2 cup sour cream
1 1/2 Tbsp. vinegar
1/2 tsp. pepper

Peel and slice cukes very thin. Add salt, mix and set in refrigerator for 1/2 to 1 hour. Drain off all water. Add sour cream and vinegar and pepper; mix thoroughly and serve chilled.

Corn Relish

12 ears corn
1 head cabbage
3 cups sugar
2 Tbsp. mustard seed
2 Tbsp. slat
3 peppers
1 pt. vinegar
1 onion
celery seed to taste

Grind cabbage, peppers, onion. Mix all ingedients together with vinegar. I cook until all is tender - can while hot.

100 Year Old Pork Cake

1 lb. salt pork (all fat)
1 pt. boiling water
4 cups sugar
1/2 cup molasses
1 egg
1 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. cloves
1 lb. raisins
6 cups flour

Put pork thru grinder, pour boiling water over it and let stand until lukewarm. Stir in sugar, spices, soda, well-beaten egg, and molasses. Sift flour before measuring. Add flour and fruit to pork mixture. Bake for 2 hours in a 300 degree oven.

Eggs with onion bouillon

4 eggs
1 onion bouillon cube
1 Tbsp. boiling water
1 Tbsp. butter

Beat eggs well. Dissolve bouillon cube in water and att to beaten eggs. Mix well. Melt butter in skillet and scramble eggs or make into omelet.

For a heartier meal add snipped parsley or chives, minced cooked ham, and grated cheese when eggs are partially cooked.

Whole Grain Caraway Bread

2 cups milk, scalded
1 pkg. yeast
2 Tbsp. molasses
2 Tbsp. honey
2 cups flour
2 Tbsp. oil
1 cup rye flour
1 cup whole wheat flour
2 Tbsp. caraway seeds
1 tsp. salt

Add yeast to scalded milk along with molasses, honey, and oil. Stir well until yeast is dissolved. Combine with flours, caraway seed, and salt in large mixing bowl. Turn dough into greased mold. Place in slow cooker, cover container with aluminum foil, cut several slits in foil. Place lid on slow cooker loosely, allowing steam to escape. Cook on high for 2 1/2 to 3 1/2 hours or until skewer comes out clean.

Cheesecake

1 lb. ricotta cheese
1 pt. sour cream
1 lb. cream cheese
1 1/2 cups sugar
6 Tbsp. flour
6 eggs
2 tsp. vanilla

Mix, beating in eggs one at a time. Bake 350 degrees for 1 hour, turn off oven and leave in for 1 hour more.

Tuna a la King

2 Tbsp. chopped green pepper
1 Tbsp. butter
1 can cream of mushroom soup
1/2 cup milk
1 - 7 oz. can tuna fish, drained
2 Tbsp. chopped pimento
3 hard cooked eggs, quartered
12 slices, thin sliced bread

Cook green pepper in butter until soft - mix in soup, add milk. Heat in top double boiler. Break tuna fish into chunks. Add to soup with pimento and eggs, reserving one yolk for garnish. Force this yolk thru a fine sieve. Heat oven to 375 degrees. Ttrim crusts from bread. Press a slice of bread into each section of muffin pans. Toast bread for 12 - 15 minutes. Pour mixture over toast tulips. Garnish with pimento or paprika.

Rocks

1 cup dark brown sugar
1/2 cup butter, melted
1 cup raisins, chopped
1 cup nuts, chopped
2 eggs
2 cups flour
1/2 tsp. baking soda in a little hot water

Bake at 350 degrees for between 10 and 15 minutes.

1 3/4 cups flour
3 tsp. baking powder
1 Tbsp. sugar
1 tsp. salt
2 eggs
1 cup milk
4 Tbsp. butter

Rice Souffle

1 box rice
1/4 lb. grated cheese
pint milk
4 eggs, seperated

Cook rice until tender. Make medium cream sauce with the milk. Put grated cheese in this sauce, 1 Tbsp. butter, salt, pepper and a little paprika. When sauce is cooked take from stove and put in 4 well beaten yoks. Fold in rice, lastly fold in beated egg whites to this mixture. Put in greased pan and bake in a medium oven for half an hour. Serve hot.

2 lb. fresh ham, ground
1 cup cracker crumbs
1 cup boiling water
2 eggs
sage
salt
pepper

Quick Mushroom and Eggs

1 can cream of mushroom soup
8 eggs, slightly beaten
dash pepper
2 Tbsp. butter

Stir soup until smooth and add eggs and pepper. Melt butter in pan and cook 1/4 of mixture over low heat. Do not stir. Lift cooked portions to let uncooked potions flow to bottom. Cook until eggs are set but moist.

Peanut Butter Cookies

1 cup shortening
1 cup sugar
1 cup brown sugar
1 cup peanut butter
1 egg
3 cups flour
2 tsp. soda
pinch salt
2 tsp. vanilla
dash of milk

Bake at 375 degrees.

Chocolate Oatmeal Cake

1 cup rolled oats - uncooked
1/2 cup shortening
2 eggs
1/2 cup cocoa
1/2 tsp. salt
1 1/2 cup boiling water
1 1/2 cup sugar
1 cup sifted flour
1 tsp. soda
1 tsp. vanilla

Mix rolled oats and boiling water, let cool. Cream shortening, sugar and eggs. Add oatmeal mixture along with flour, cocoa, soda, salt, and vanilla. Beat until smooth. Bake in 8 inch square pan greased and floured - 350 degrees for 35 minutes.

This is a delicious moist chocolate cake that freezes well.

Cherry Winks

2 1/4 cups flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
3/4 cup shortening
1 cup sugar
2 eggs
2 Tbsp. milk
1 tsp. vanilla

Mix well the following in gradually.

1 cup nuts
1 cup dates
1/3 cup marchino cherries chopped

Roll into approximately 1/2 inch balls.
Then crush 2 1/2 cups corn flakes and roll each ball of dough into corn flakes.
Bake at 375 degrees for 10 to 12 minutes.

Squash and Eggs

1 lb. zucchini squash
1 onion, minced
1 green pepper
1/4 cup oil
salt and pepper
eggs

Put oil, cut-up zuccini, onion, green pepper, salt and pepper in frying pan and cook until tender. Pour in lightly beaten eggs and cook until firm. Turn onto plate and cute into wedge once slightly cooled.

Pennsylvania Dutch Shoe-Fly Pie

For the crumb part:
1/4 cup shortening
1 1/2 cups flour
1 cup brown sugar

Work the above ingredients together.

For the liquid part:
3/4 tsp. baking soda
1/8 tsp. nutmeg
Pinch ginger
Pinch cinnamon
Pinch cloves
1/4 tsp. salt
3/4 cup molasses
3/4 cup hot water

Mix well together and add hot water.

Into an unbaked pie shell, combine the crumbs and liquid in alternate layers, with crumbs on bottom and top.
Bake 15 minutes at 450 degrees, then bake 20 minutes at 350 degrees.

Brown Bread

1 1/2 cups graham flour
1/2 cup flour
3 Tbsp. sugar
1 cup buttermilk
1 tsp. baking soda
1/2 cup molasses
1 tsp. baking powder
pinch salt
1/2 cup seedless raisins
