Salad Dressing

1 cup salad oil
1 cup sugar
1/2 cup vinegar
juice of 1 lemon
horseradish or grated onion to taste
1/3 cup catsup
pinch of salt

Beat all with beater and serve over tossed salad.

Bon Bon Cookies

1/2 cup soft oleo
3/4 cup sifted confectioners sugar
1 Tbsp. vanilla
1 1/2 cups sifted flour
1/8 tsp. salt
1 square unsweetened chocolate, melted

Mix oleo, sugar and vanilla. Blend in flour and salt thoroughly. Wrap a tablespoon of dough around a nut or cherry. Bake on ungreased cookie sheet for 12 to 15 minutes at 350 degrees.

Carrot Bread

2 1/2 cups flour
2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
1 cup grated pare carrots
1 cup golden raisins
1/2 cup chopped walnuts
1 cup dark brown sugar, firmly packed
2 eggs
1 cup milk
1/4 cup melted butter

Preheat oven to 350 degrees. Sift together flour, baking powder, soda, cinnamon, and salt. In a bowl combine carrots, raisins, and walnuts; toss to mix, then mix in brown sugar. In a large bowl beat eggs until foamy; beat in milk and butter. Stir in carrot mixture, then flour mixture. Pour into a well-greased bundt pan and bake for 1 hour. Let cool in pan on rack 5 minutes; turn out and cool.

Cranberry Quick Bread

1/2 cup oleo
3/4 cup sugar
2 eggs
3 cups flour
1 Tbsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 cup orange juice
1 cup chopped cranberries
1/2 cup chopped nuts

Beat oleo and sugar; add eggs one at a time mixing well. Add dry ingredients alternately with juice, mixing well. Stir in cranberries and nuts. Pour into greased and floured 9x5 loaf pan and bake at 350 degrees for 1 hour and 15 minutes or until toothpick comes out clean. Cool 5 minutes and then remove from pan.

This is good with orange spread. Combine 1/2 cup oleo with 1 Tbsp. powdered sugar and 1 tsp. grated orange rind. Mix well and chill.

Rhubarb Cake

Grandma loved fresh rhubarb and if I remember correctly she used to have some rhubarb plants along the side of the house.

1/2 cup oleo
1 1/2 cups brown sugar
1 egg
1 tsp. vanilla
1 cup buttermilk (you can also use 1 tsp. vinegar in 1 cup regular milk)
2 cups flour
1/2 tsp. salt
1 tsp. soda
2 cups diced rhubarb added last

Topping:
1/4 cup sugar
1 tsp. cinnamon
1/2 cup chopped walnuts

Sprinkle over batter and bake at 350 degrees for 40 to 50 minutes.

Corn Relish

12 ears corn
1 head cabbage
3 cups sugar
2 Tbsp. mustard seed
2 Tbsp. salt
3 peppers
1 pint vinegar
6 onions
celery seed to taste

Grind cabbage, peppers, and onions. Mix with remaining ingredients. Cook until tender and can while hot.

Bananas and Spice

Cut 4 ripe peeled bananas in half lengthwise and crosswise. In skillet melt 1/4 cup butter over medium heat. Add 1/4 cup firmly pcked brown sugar, stir until dissolved. Add 1 Tbsp. lemon juice, 1/2 tsp. cinnamon, 1/4 tsp. nutmeg and bananas. Cook, turning bananas occasionally, 5 minutes. Remove bananas to serving plate. Spoon sauce over bananas.

Cheesecake

1 lb. ricotta cheese
1 pt. sour cream
1 lb. cream cheese
1 1/2 cups sugar
6 Tbsp. flour
6 eggs
2 tsp. vanilla

Mix, beating in eggs seperately. Bake 350 degrees for 1 hour, turn off oven and leave in closed oven for 1 hour more.

Orange Cheese Pie

graham cracker crust
3 tsp. unflavored gelatin
1/2 cup sugar
3 eggs, separated
6 oz. orange juice concentrate, thawed
16 oz. cottage cheese, seived
1/4 cup sugar
1 cup sour cream

Combine gelatin and sugar. Beat in 3 egg yolks. Stir in water and orange juice, heat to just boiling. Cool. Stir in cottage cheese and chill till mounds. Beat 3 egg whites; beat into egg whites. Fold in egg whites and cream into orange mixture. Chill into pie shell until set. Garnish with thin slices of orange.

Chocolae Stove-top Cookies

2 cups sugar
1/2 cup milk
1/4 cup cocoa
1/4 cup oleo

Combine these 4 in saucepan and cook until mixture begins to boil - cool 1 minute before adding

1 tsp. vanilla
dahs salt
1/2 cup chunky peanut butter
3 cups uncooked quick oats

Stir well and drop by teaspoon on wax paper. Let cool.

Tuna Stuffed Baked Potatoes

Filling:
4 baked potatoes, baked
1 cup mayonnaise
1/2 cup grated cheddar cheese
1/4 cup chopped green pepper
1/4 cup chopped pimiento
1/4 cup chopped scallion
2 (7 oz) cans albacore tuna, drained

Topping:
1/4 cup mayonnaise
2 Tbsp. grated cheddar cheese
1 egg white, stiffly beaten

Scoop baked potatoes from shells. Lightly toss with other filling ingredients. Spoon back into shells. Heat 10 minutes at 400 degrees. For topping: fold mayonnaise and cheese into egg white. Spoon over hot, stuffed potatoes. Heat an additional 10 minutes, until lightly browned.

Sweet & Spicy Kielbasa

1 lb. Kielbasa, sliced
1 pkg. taco seasoning mix
1 can (14 1/2 oz) tomatoes
1/4 cup peach preserves
3 cups cooked rice

Brown sausage, add seasoning, tomatoes and peach preserves. Simmer for 15 minutes. Serve over rice.

Frozen Fruit Salad

1 cup heavy cream
1/2 cup mayonnaise
1 - #2 can fruit cocktail (drained)
1 small bottle Maraschino cherries (drained)
12 marshmallows, quartered
1 cup moist coconut

Beat 1 cup heavy cream, add 1/2 cup mayonnaise. Pour over fruit, mix carefully. Put in double ice cube tray and turn dial in freezer to medium. Let stand at least 4 hours.

Brownies

1 cup sugar
3 Tbsp. shortening
1 egg, unbeaten
5 Tbsp. cocoa
2 tsp. butter
1 cup flour
1 level tsp. baking powder
1/4 tsp. salt
1/2 cup nuts, broken
1/3 cup milk

Bake very slowly for 1/2 hour then cut in squares.

Ellen's Molasses Cookies

Grandma collected recipes from friends and relatives. This recipe she marked as Ellen's - and is in gram's usual shorthand of just a list of ingredients.

1 cup sugar
1 cup shortening
2 cups molasses
1 cup hot water
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
6 cups flour
4 tsp. soda

Corn Fritters

1 1/3 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar
1 cup cream style corn
1 egg, unbeaten

Sift dry ingredients together, add corn and unbeaten egg. Mix only until ingredients are well moistened. Drop by teaspoonfuls in deep hot shortening until a rich brown and throughout. Drain on paper towels. Serve hot with syrup or dusted with confectioner's sugar. Makes about 18 fritters.

Thelma's Sandwich Spread

Now I don't remember ever having this, but mom says it was really good.

12 green peppers
12 red peppers
12 green tomatoes
2 large onions

Grind all together, add scant pint of water, 2 cups sugar, 1 heaping Tbsp. flour, 1 heaping Tbsp. celery seed, 4 heaping Tbsp. prepared mustard. Boil for 15 minutes, add quart of mayonnaise and seal in jars.

1 3/4 cups flour
3 tsp. baking powder
1 Tbsp. sugar
1 tsp. salt
2 eggs
1 cup milk
4 Tbsp. butter

Mix all and make on hot waffle iron.

Apple Wheat Germ Pork Chops

Grandma went through the whole wheat germ phase. A cold cereal breakfast consisted of mixing 2 or 3 types of cereals and then topping it all off with wheat germ.

1 cup peeled, finely chopped apple
1/4 cup finely chopped onion
1 Tbsp. butter
1/2 cup wheat germ
1/2 cup soft bread cubes
1/4 cup raisins
1 Tbsp. water
6 pork chops, 1-inch thick with pockets for stuffing
1 1/2 tsp. salt
2 Tbsp. cooking oil
6 thin lemon slices
1/4 cup water

Saute apple and onion in butter until tender. Add wheat germ, bread cubes, raisins and 1 Tbsp. water. Mix well. Sprinkle chops with salt. Place about 1/3 cup stuffing in pocket of each chop. Fasten pockets securely with wooden picks. Brown chops lightly on both sides in hot oil over medium heat. Top each chop with a lemon slice. Add 1/4 cup water. Cover and simmer over low heat for 45 minutes or until tender.

Easy Beer Bread

3 cups self-rising flour
1 can beer (flat or fresh)
1/3 cup sugar

Mix ingredients by hand - dough will be stiff and lumpy. Spoon into a greased loaf pan - spred out to cover bottom of pan. Bake 55 minutes at 350 degrees. Brush top with butter when loaf is removed from pan. This is a heavy, chewy version and especially good with stew or soup.

Cabbage Wedges with Celery Sauce

I saw this recipe and thought of grandma's boiled dinners. I don't remember ever having anything on the cabbage other than vinegar though. Corned Beef, cabbage, and potatoes - all boiled and all delicious. It was a Friday evening dinner that created leftovers for lunches.

1/2 medium cabbage, cut in 4 wedges
1 1/2 Tbsp. butter
1 cup finely chopped celery
1 1/2 Tbsp. flour
1 cup milk
1/2 cup shredded sharp cheddar cheese
1/2 tsp. celery salt
salt and pepper to taste

Cook cabbage wedges, covered, in 1 inch lightly salted boiling water for 10 minutes or until tender. Drain, reserving 1/4 cup liquid. Place wedges in serving bowl; cover and keep warm.

Melt butter in saucepan; add celery and cook until tender. Blend in flour and cook 1 minute, stirring constantly. Gradually stir in milk and reserved 1/4 cup cabbage liquid; cook, stirring constantly until smooth and thickened, about 3 minutes. Stir in cheese and seasonings. Pour sauce over cabbage wedges.

Prune Bars

1 cup flour
1 1/2 tsp. baking powder
1 tsp. salt
1 cup packaged pitted prunes, cut into pieces
3 eggs
2 tsp. vanilla
1 cup sugar
1 cup chopped walnuts
confectioners' sugar

Stir together the flour, baking powder and salt; add prunes and toss. In a separate bowl beat eggs wih vanilla until foamy; gradually beat in sugar until thickened. Fold in prune mixture and walnuts. Turn into buttered pan and bake at 350 degrees for about 30 minutes. Cool in pan on wire rack. Cut into 48 small bars and when completely cooled roll in confectioners' sugar.

Dutch Apple Cake

3 cups apples, pared, cored and thinly sliced
2 1/2 cups sifted flour
1/2 tsp. salt
4 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 cup shortening
3/4 cup sugar
3 eggs
1 cup milk
1 1/2 cups moist, shredded coconut
1 1/2 cups heavy cream, whipped, with
1/4 tsp. cinnamon and
1 Tbsp. sugar

Resift flour with salt, baking powder and cinnamon. Cream shortening and sugar until light and fluffy. Beat in eggs, one at a time, alternately add dry ingredients and milk in creamed mixture, mixing until smooth. Fold in apple slices and coconut, reserving 2 Tbsp. of coconut.

Divide batter into three 8-inch layer cake pans, which have been greased and floured. Bake in 350 degree oven for 40 - 50 minutes. Let cool completely. Frost between layers with cinnamon-flavored whipped cream. Chill for at least an hour. Just before serving, garnish top of cake with remaining 2 Tbsp. coconut.

Easy Chocolate Drops

2 cups semi-sweet chocolate bits
1 cup sweetened, condesned milk
about 30 pecans

Cook chocolate bits and one cup sweetened, condensed milk in heavy saucepan over low heat, stirring until smooth and well blended. Remove. Drop by teaspoonfuls onto waxed paper. Press a pecan into each piece. Yields about 30.

Beer-Batter Chicken

3/4 cup beer
2 1/2 pound broiler-fryer chicken
2 eggs, separated
3/4 cup flour
3/4 tsp. salt
1 1/2 tsp. vegetable oil
1/4 tsp. garlic powder

Let beer stand at room temperature until flat, about 45 minutes. Cut chicken into pieces; cut each breast half into halves. Pour enough water on chicken in Dutch oven just to cover. Heat to boiling; reduce heat. Cover and simmer 25 minutes. Remove chicken from broth; drain and pat dry.

Heat oil (2 to 3 inches) in deep-fat fryer or kettle to 375 degrees. Beat egg whites until stiff. Beat beer, flour, salt, 1 1/2 tsp. oil, the garlic powder and egg yolks until smooth. Fold egg whites into beer mixtures.

Dip chicken pieces one at a time into batter. Fry 3 or 4 at a time until golden brown, about 5 to 7 minutes.

Ham Au Gratin

It was nice to get home for the holidays and a couple of times the conversation to grandma and things she would say or do - it was a nice time to remember her. And in that spirit I look forward to continuing to share her favorite recipes.

3/4 lb. ground boiled ham
1 1/2 cups bread crumbs
1/8 tsp. white pepper
2 eggs
2 cups milk
1 Tbsp. butter

Place ham and bread crumbs in alternate layers in baking dish, seasoning with pepper with the mixing. Beat eggs light and add to the milk. Pour liquid over the ham and crumbs. Place butter in dots over the top and bake 1/2 hour in quick oven.
