Rhubarb Cake
Grandma loved fresh rhubarb and if I remember correctly she used to have some rhubarb plants along the side of the house.
1/2 cup oleo
1 1/2 cups brown sugar
1 egg
1 tsp. vanilla
1 cup buttermilk (you can also use 1 tsp. vinegar in 1 cup regular milk)
2 cups flour
1/2 tsp. salt
1 tsp. soda
2 cups diced rhubarb added last
Topping:
1/4 cup sugar
1 tsp. cinnamon
1/2 cup chopped walnuts
Sprinkle over batter and bake at 350 degrees for 40 to 50 minutes.
