Apple Wheat Germ Pork Chops
Grandma went through the whole wheat germ phase. A cold cereal breakfast consisted of mixing 2 or 3 types of cereals and then topping it all off with wheat germ.
1 cup peeled, finely chopped apple
1/4 cup finely chopped onion
1 Tbsp. butter
1/2 cup wheat germ
1/2 cup soft bread cubes
1/4 cup raisins
1 Tbsp. water
6 pork chops, 1-inch thick with pockets for stuffing
1 1/2 tsp. salt
2 Tbsp. cooking oil
6 thin lemon slices
1/4 cup water
Saute apple and onion in butter until tender. Add wheat germ, bread cubes, raisins and 1 Tbsp. water. Mix well. Sprinkle chops with salt. Place about 1/3 cup stuffing in pocket of each chop. Fasten pockets securely with wooden picks. Brown chops lightly on both sides in hot oil over medium heat. Top each chop with a lemon slice. Add 1/4 cup water. Cover and simmer over low heat for 45 minutes or until tender.
