Oatmeal Cookies
1 cup raisins cooked in 1 cup water

Chocolate Frosting
4 squares unsweetened chocolate

4 Tbsp. flour

Add chocolate to milk in top of double boiler and heat. When chocolate is melted, beat until blended. Sift flour with sugar. Add a small amount of chocolate mixture stirring until smooth. Return to double boiler. Add butter and vanilla. Cool until thickened and spread on cakes. Will cover tops and sides of two nine inch layers.

White Fish Bake
1 lb. white fish fillets
1 can cream of celery soup
1 cup cooked cut green beans
2 tsp. prepared horseradish
2 Tbsp. chopped pimiento
1/2 tsp. dill
In shallow baking dish, arrange fish fillets in single layer. Bake at 350 degrees for 15 minutes. Drain off excess liquid. Combine remaining ingredients and pour over fish. Bake 10 minutes more. Stir sauce before serving.

Blueberry Streusel Cobbler
It seems that as a kid we we're always picking something - early in the spring it was fiddle head ferns, then late spring brought on the strawberries, and finally the summer brought huckleberries and blueberries.
3 pints blueberries (6 cups)
1/2 cup sugar
1/4 cup flour
2 Tbsp. lemon juice
In 12 x 8 baking dish, mix well blueberries, sugar, flour, and lemon juice. Prepare Streusel Topping; crumble mixture evenly over blueberries. Bake at 375 degrees for 45 minutes.

In large bowl, with hand, knead 3 1/4 cups flour, 1 cup softened butter, 1/4 cup sugar, 1/4 cup packed dark brown sugar, 1 tsp. vanilla, 1 tsp. ground cinnamon, 1/2 tsp. salt until smooth.

1 cup flour
1/2 tsp. salt

1. Sift flour, measure, add salt and sift again.
2. Beat eggs until light and thick.
3. Add flour to 1/3 of milk; continue to beat slowly until all flour is moistened - about 30 seconds.
4. Add remaining milk and liquid fat gradually, beating until mixture is free from lumps - 1 to 2 minutes.
5. Pour, filling greased baking cups a little less than half full.
6. Bake in hot oven (425 degrees) about 40 minutes.
Makes 8 popovers.

Tapioca Pudding
Soak 1 cup of tapioca overnight in 1 pint of warm water. In the morning add 1 quart of milk and boil about 20 minutes stirring gently. Then add 2 eggs well beaten, 2 cups sugar, butter and salt to taste and allow to boil a few minutes longer. Remove from stove and add 1 tsp. vanilla. Cool completely.

Zucchini Pancakes
2 cups grated zucchini

Olive Roasted Corn
It was always fun to go to grandma and grandpa's house on weekends. Especially when they lived along the Susquehanna River. Often during the summer the grill would be going and along with the meats, roasting corn was a frequent favorite.
12 ears corn
1/3 cup finely chopped pimiento stuffed olives
1/2 cup melted butter
1/4 cup honey
1/4 cup lemon juice
Brush corn generously with combined ingredients. Wrap each ear in aluminum foil - secure ends. Grill 3 or 4 inches over hot coals for 10 to 15 minutes. Turn corn frequently. Serve with any remaining mixture.

Allsweet Mints
5 Tbsp. butter
4 drops red food coloring (or any color you want)
1 tsp. spearmint or peppermint extract
4 cups powdered sugar, unsifted
2 Tbsp. cold water
Melt margarine. Add food coloring and extract and stir to blend. Stir in powdered sugar and water. Knead until smooth. Roll out on wax paper to about 1/4 inch thickness and cut with small cookie cutters or roll into small balls and flatten with fork or glass. Trimmings may be re-kneaded and rolled again. After shaping, place on cake racks for several hours to dry.

2 cups chpped walnuts
2 8-oz. pkgs. cream cheese, softened
1/2 cup sugar
4 eggs
1/4 flour
2 Tbsp. lemon juice
Double broiler morsels and butter, stir until mixture is smooth. Transfer to bowl. Stir in cracker crumbs and walnuts with fork until mixture resembles fine crumbs. Reserve 2 cups for topping . Press remaining into 15 1/2 x 10 1/2 pan. Bake 12 minutes at 350 degrees.
In large mixing bowl, combine cheese and sugar, beat until creamy. Add eggs one at a time, mixing well. Blend in flour and lemon juice. Pour evenly over hot baked crust. Sprinkle with reserved topping. Bake 25 minutes. Cool completely.

Jessies Steamed Pudding
Mix 1/2 cup flour, 1 tsp. baking powder and a little salt with milk until about like dumplings. Put 2 tsp. of raspberries in cups and cover with the above dough. Steam 20 minutes. Remove from cups and pour the following sauce over them.
Stir 1/2 Tbsp. flour in 1/2 cup sugar, add 1/2 cup of boiling water and cook until thick.
This recipe serves two people. You may use any other fruit instead of raspberries.

Lime Water Pickles
7 lbs. sliced cucumbers
2 cups boiling lime
2 gallons water
Soak for 24 hours in this mixture.
Begin the next day at same time. Put cucumbers in cold water for 3 hours (add ice to keep cool). Then after 3 hours drain. Meanwhile mix the following mixture:
1/2 gallon vinegar
4 1/2 lbs. sugar
2 Tbsp. salt
1 tsp. celery seed
2 tsp. whole cloves
2 tsp. mixed pickling spices
Bring to boil, then add drained cucumbers and let set overnight. Next morning cook 35 minutes and seal.

Pour into unbaked pie shell and bake in hot oven (425 degrees) for 45 minutes or until both filling and crust are done. Beat egg whites until foamy; add 1/3 cup sugar gradually, beating well after each addition. Beat mixture into stiff peaks. Fold in coconut and pile coconut-meringue over filling. Top with additional coconut and bake in hot oven (425 degrees) for about 8 minutes or until delicately brown.

Melt fat in 10 inch skillet. Spread half potatoes over bottom and sprinkle with salt and pepper. Top with half the onion and green pepper and half meat. Repeat layers reserving meat for garnish. Cover and cook over low heat till potatoes are tender - about 20 minutes. Break eggs in bowl and pour over potatoes breaking yolks and spreading evenly with fork. Add reserved meat in spoke fashion. Cover and cook till eggs are set - about 10 minutes. Top with cheese and cover till cheese starts to melt - about 2 minutes. Makes about 5 to 6 servings.

Melt chocolate and shortening. Remove from stove, cool slightly and add remaining ingredients in order - eggs added 1 at a time. Bake 25 minutes in a 350 degree oven.

Inside-Out Cheeseburgers
1/4 cup butter
1/2 tsp. garlic powder
6 hamburger buns, split
3 cheese slices
1 pound ground beef
2 Tbsp. chopped fresh onion
1/4 cup dry bread crumbs
1/4 cup milk
3 Tbsp. chili sauce
2 tsp. prepared mustard
2 tsp. Worcestershire sauce
1 tsp. cream style horseradish
4 drops hot pepper sauce
1 tsp. salt
1/8 tsp. pepper
In 1-quart bowl, cream together butter and garlic powder. Spread evenly on half of each bun. Cut cheese slices into four squares.
In 3-quart bowl, lightly mix remaining ingredients, except cheese slices. Shape meat into 12 thin patties. Place 2 pieces of cheese on each of 6 patties. Top each with second pattie and seal edges well. In heavy 10-inch fry pan toast 6 bun halves, buttered side down, over medium heat until golden; about 2 to 3 minutes. Remove from pan; keep warm. In same fry pan, cook patties to desired doneness, about 5 minutes on each side. Turn carefully. Serve on hamburger buns.

Vanilla Hard Sauce

1 tsp. vanilla
1 cup confectioners sugar
