Bran Muffins
1 cup boiling water
2 cups bran buds
1 cup whole bran cereal
2 cups buttermilk
1 1/4 cups sugar
1/2 cup shortening
2 eggs
3 cups flour
2 1/2 tsp. soda
1 tsp. salt
Pour boiling water over bran cereals; mix well. Cool. Stir in buttermilk. Cream sugar and shortening in a bowl until light and fluffy; add eggs and beat well. Sift four, soda and salt together. Stir cooled bran mixture into creamed mixture. Add dry ingredients and stir just to moisten. Fill well greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes.
