Potato Salad
4 cups cubed cooked potatoes (about 4 medium sized postatoes)
1 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped sweet pickle
4 hard-cooked eggs, chopped
2/3 cup mayonnaise
2 tsp. prepared mustard
1 1/2 tsp. salt
3 Tbsp. chopped pimento
2 tsp. celery seed
Combine potatoes, celery, onion, sweet pickle and hard-cooked eggs. Blend mayonnaise with mustard; stir in remaining ingredients. Mix mayonnaise mixture lightly with potatoe mixture until potatoes are well coated.
