Salmon Cakes
1 (7 1/2 oz) can salmon, drained and flaked
1/3 cup saltine cracker crumbs
1 egg, slightly beaten
2 Tbsp. onion, chopped
2 Tbsp. milk
1 Tbsp. lemon juice
2 Tbsp. butter
Combine all ingredients except butter. Shape into 4 flat patties. Melt butter in skillet and saute patties on both sides until golden brown and heated through.
