Chocolate Pie
9 inch baked pie shell
1 cup sugar
1/4 cup cocoa
1/4 cup cornstarch
1/4 tsp. salt
1 1/2 cups boiling water
3 egg yolks, broken but not beaten
2 Tbsp. butter
1 tsp. vanilla
Combine sugar, cocoa, cornstarch and salt in saucepan, gradually add boiling water, mixing thoroughly. Cook on medium stirring constantly until thick. Cook 2 minutes. Add a little cocoa mixture to eggs, stir, then stir back into cocoa mixture and cook for 1 minute. Remove from heat and add butter and vanilla and let cool slightly. Pour into pie shell.
If you like, top with meringue and bake in medium oven for about 15 minutes until lightly browned.
