Homemade Sausage

2 lbs. boneless shoulder pork roast cut into 1 inch cubes
1/4 cup chopped fresh parsley
2 1/2 tsp. salt
1 tsp. sage
1/2 tsp. pepper

Grind pork - mix well with rest of ingredients.

Variations:

Hot Sausage - omit parsley and add 1/2 tsp. paprika, 1/2 tsp. crushed red pepper, and 1 garlic clove crushed.

Italian Sausage - omit parsley and add 3/4 tsp. fennel seed and 1/2 tsp. oregano leaves.

Smoked Sausage - make any of the above recipes and add 2 tsp. liquid smoke.
