Sweet Potato Biscuits
2 1/2 cups flour
1 Tbsp. baking powder
1 tsp. salt
1 Tbsp. brown sugar
3/4 mashed sweet potato
1/2 cup (1 stick) butter
1/2 cup milk
1 egg
Combine flour, baking powder, salt, and brown sugar. Cut in potatoes and butter until mixture resembles coarse meal. Lightly mix in milk and egg. Turn dough onto floured surface and knead lightly about 15 times. Roll to 3/4 inch thickness. Cut biscuits and place on baking sheet. Bake at 375 degrees for 20 minutes.
