Reuben Sandwiches
Creamy Russian Dressing
1/2 cup mayonnaise or salad dressing
1/4 cup Chili sauce
In a small bowl, combine mayonnaise and chili sauce; mix well.
Sandwich
2 cups drained sauerkraut
1/4 cup chopped sweet onion
3 Tbsp. chopped fresh parsley
16 slices pumpernickel rye bread
1/2 to 3/4 lb. sliced corned beef (8 slices)
3/4 lb. Swiss cheese, sliced
Butter, softened
In 1-qt. bowl combine sauerkraut, onion, and parsley. Butter one side each of 8 slices of bread and place butter side down on ungreased baking sheet. Spread Russian Dressing on each of these 8 slices of bread. Place corned beef slice, 1/3 cup sauerkraut mixture, then cheese slice on the 8 bread slices. Top with remaining bread slices and lightly butter the top side of sandwich. Bake near center of oven at 450 degrees for 4 to 6 minutes on each side.
