Creamed Dried Beef
In large heavy skillet (cast iron is best) melt 1/4 lb. of butter. Tear into small pieces 5 oz. of dried beef. Frizzle beef in the butter until it starts to crisp on the edges. Add 1/2 cup flour and stir until all meat is coated and butter absorbed - lower heat and add 1 qt. milk. Heat slowly until mixture simmers and thickens. Serve over baked potatoes.
Grandma later added the following: Add 1/8 tsp. nutmeg and 1 Tbsp. prepared mustard to 1/4 lb. of butter before beef is frizzled for added flavor.
This recipe is also good for cod fish.
