Potato Candy

1 pound pkg. confectioner's sugar
1 7-ounce pkg. coconut
1 medium potato, cooked
1/4 cup peanut butter
2 squares baking chocolate

Mash boiled potato in a bowl and add confectioner's sugar, coconut and peanut butter and mix with fork until well blended. Press in a pie plate. Melt chocolate and spread evenly over mixture. Put in refrigerator and let set until chocolate is hardened. Cut and serve.
