Bird's Nest Cookies
1/2 cup butter
1/4 cup brown sugar
1 egg yolk
1 cup flour
1 egg white
1 cup nuts, finely chopped
your favorite preserves
Cream butter with brown sugar; add egg yolk and beat. Gradually add flour and form mixture into balls. Dip balls into slightly beaten egg white and roll in finely chopped nuts, press in center and bake at 350 degrees for 8 minutes, remove from ovn and press centers again and bake 10 minutes more. Cool and fill centers with your favorite preserves.
