Carrot Cookies
1 cup sugar
1/2 cup shortening
1 egg
1 tsp. lemon extract
1/2 cup shredded carrots
1/2 cup raisins
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. salt
Cream shortening and sugar together. Beat in egg and lemon extract. Sift dry ingredients together and add with carrots and raisins, mixing well. Drop by teaspoonfuls onto greased baking sheet. Bake at 400 degrees for 10 to 12 minutes.
