Hot Sweet 'N Sour Bean Salad
4 slices bacon
1/3 cup cider vinegar
1/4 cup sugar
1 Tbsp. cornstarch
1/2 tsp. salt
dash pepper
1 can (16 oz.) cut green beans, drained
1 can (15 oz.) red kidney beans, undrained
1 can (15 oz.) dark red kidney beans, drained
Fry bacon until crisp; crumble and set aside. Reserve 2 Tbsp. drippings. Combine vinegar, sugar, cornstarch, salt and pepper; add to reserved drippings. Cook until thickened; stirring occasionally. Add bacon and remaining ingredients; cover and simmer 5 to 10 minutes.
