Onion upside-down Bread
2 to 3 medium sweet Spanish onions
2 Tbsp. butter
2 Tbsp. brown sugar
2 cups flour
4 tsp. baking powder
1 tsp. salt
1 tsp. sugar
1 egg, beaten
1 cup milk
1/4 cup oil
Peel and thickly slice onions. Saute in 2 Tbsp. butter until golden and fairly soft. Spread remaining 1 Tbsp. butter in 9-inch baking dish. Sprinkle with brown sugar. Arrange onion slices in baking dish. For topping, combine dry ingredients. Add egg, milk and oil. Spread over top of onions. Bake 35 to 40 minutes at 350 degrees. Let cool for 5 minutes then turn out onto serving plate.
