Corn Fritters

1/2 cup flour - stir to aerate before measuring
1 tsp. baking powder
1/4 tsp. salt
1/4 cup cornmeal
1 egg
1/4 cup milk
1 Tbsp. butter
1 cup corn kernals, cut from leftover cobs

Sift together flour, baking powder and salt; stir in cornmeal. Mix together egg and milk. Add to flour/cornmeal mixture. Add butter and corn. Drop by tablespoonfuls into hot fat and fry until browned - about 3 minutes. Serve with maple syrup.
