Candy Spiced Peanuts

1 egg white
1 tsp. water
1 1/2 cups salted peanuts
1/2 cup sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger

Preheat oven to 250 degrees.
Beat egg white and water until frothy. Add nuts and stir to coat well. Blend sugar and spices - add to nuts. Mix well. Spread nuts out on oiled shallow baking pan. Bake, turning nuts over every 15 minutes for 1 hour or until candy coating hardens on nuts. Cool completely.
