Rhubarb Pie
Grandma always made a good rhubarb pie. It had the right level of tartiness without making you pucker up - too much. When my grandparents lived along the river, grandma grew a couple plants of rhubarb - enough to bake a number of pies.
1 cup sugar
1 cup rhubarb, cut up in 1 inch pieces
1 Tbsp. flour
1 egg
orange flavoring
Cook rhubarb seperately, then add sugar and flour, which have been mixed together; then add 1 egg beaten and flavoring to taste. Bake between two rich crusts.
