Cream, Banana, or Coconut Pie

Line a pie dish with a rich crust, pinch here and there, and bake in a hot oven.

Mix together 1/3 cup flour with 3/4 cup sugar and a pinch of salt. Add 1 pt. scalded milk and 3 Tbsp. butter. Cook 5 minutes; add beaten yolk of 2 eggs gradually to thicken milk. Cook a few minutes stirring constantly. Set aside to cool; add 1 tsp. orange extract and fill prepared crust.

Make a meringue of the egg whites whipped very stiff with 1/4 cup sugar. Spread on pie and set in a slow oven to brown.

For banana pie add 3 bananas to the mixture.

For cocoanut pie add 1/2 cup shredded cocoanut.

Delicious!
