Layer Cake with Banana Filling
Cake:
Into your sifter put 1 cup sugar, 1 1/2 cups flour, 1 tsp. baking powder and a pinch of salt; sift several times. Into a measuring cup put 1/4 cup of melted butter, break in 1 egg, and fill the cup with milk, turn into the dry ingredients, beat well and flavor as liked. Lemon preferably. Bake in two layers.
Filling:
Mash one ripe banana, add 1 cup sugar beaten to a froth with the white of 1 egg. Mix well and spread between the layers.
You may also use a grated apple, sweetened and beaten stiff with the white of 1 egg (which may be reserved from the cake).
