Old Fashioned Butter Cookies
1 cup butter
2 cups sugar
1 tsp. vanilla
3 eggs, well-beaten
1/2 tsp. salt
4 cups sifted flour
Cream butter; add sugar and vanila and continue creaming until light. Beat eggs and add to butter mixture. Sift flour a second time, then a third with the salt and add to the dough, mixing in extra flour if needed to make a stiff dough. Chill 20 minutes. Roll out to 1/4 inch thickness. Cut with cooky cutter and bake on lightly greased pan in a hot oven (400 degrees) for about 10 minutes. If desired, sprinkle with sugar befor baking. Remove from pans to cooling racks.
