Fresh Peach Cobbler

3 cups sliced fresh peaches
1 cup sugar
1/4 tsp. almond extract
1 Tbsp. lemon juice
1 tsp. grated lemon peel
1 1/2 cups flour
1/2 tsp. salt
3 tsp. baking powder
1 Tbsp. sugar
1/3 cup shortening
1/2 cup milk
1 egg, well beaten
2 Tbsp. sugar

Arrange peaches in greased 8-inch square baking dish. Sprinkle with mixture of 1 cup sugar, almond extract, lemon juice and lemon peel. Heat in oven while preapring shortcake mixture. Sift together flour, salt, baking powder and 1 tablespoon sugar, cut in shortening until mixture is coarse crumbs. Add milk and egg at once and stir just until flour is moistened. Spread dough over peaches. Sprinkle with 2 tablespoons sugar. Bake at 400 degrees for 35 to 40 minutes.
