Ginger-Apple Skillet Cake

Topping:
3 Tbsp. butter
1/4 cup dark brown sugar
2 Tbsp. dark corn syrup
1 medium cooking apple, peeled, cored, and thinly sliced
1/4 cup raisins
1/4 cup shredded coconut
1/4 cup pecan pieces

Cake:
1/4 cup melted butter
1/2 cup sugar
1 egg
1/2 cup dark molasses
1/2 cup milk
1 1/2 cups flour
1 tsp. cinnamon
1/2 tsp. ground cloves
1 1/2 tsp. ground ginger

To prepare topping: In an 8 1/2 inch cast iron skillet melt butter, sugar and corn syrup, spreading out evenly as sugar melts. Remove from heat. Arrange apple slices on top. Scatter raisins, nuts and coconut around apples. Set aside.

Cake: Place melted butter in a large bowl. Add sugar and egg. Mix well. Add molasses and milk and mix again. In a separate bowl combine flour and seasonings. Stir in molasses mixture and mix until just plended. Pour evenly over apples. Bake for 45 to 50 minutes at 325 degrees.
