Mince Meat

2 lbs. lean ground beef
1 lb. suet
2 lbs. sugar
5 lbs. tart apples, pared, cored, and chopped
2 lbs. muscat raisins
1 lb. sultana raisins
1 lb. currants
1/2 lb. candied citron
1/2 lb. orange peel
1 Tbsp. salt
1 tsp. cinnamon
1 tsp. allspice
1 tsp. mace
1 qt. boiled cider
brandy to taste

Combine, cover, and simmer all ingredients for 2 hours. Store for 1 month. Makes 5 qts.
