Country Cream Raisin Pie
1 1/2 cups raisins
2 cups water
2 cups light cream
1 cup brown sugar
1/4 cup cornstarch
1 1/4 tsp. nutmeg
1/4 tsp. salt
3 Tbsp. water
2 Tbsp. lemon juice
1 9-inch baked pastry shell
1/2 cup chopped nuts
Simmer the raisins in 2 cups water for 20 minutes. Add cream and sugar, simmer for 5 to 7 minutes, stirring to prevent scorching. Mix cornstarch, nutmeg, and salt with 3 Tbsp. water. Stir into hot mixture and cook until thick, stirring constantly. Add lemon juice. Fill pie shell and garnish with nuts.
