Ham Slice on Fruited Rice

1 ham slice, cut 1-inch thick
1 cup quick-cooking rice
1/2 cup finely chopped celery
1 package (12 ounces) frozen rhubarb
1 can (8 3/4 ounces) crushed pineapple
1/3 cup cold water

Grease an 8x8-inch baking dish. Place rice in baking dish. Mix celery, rhubarb, pineapple and water. Spread over rice. Place ham slice on top. Bake at 350 degrees for 1 hour.
