Peach Muffins
2 cups flour, sifted
3 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt
1 cup well-drained, canned peaches, drained
1 egg, beaten
1 cup milk
3 Tbsp. melted shortening
Sift together flour, sugar, baking powder and salt. Stir chopped peaches in with dry ingredients, coating fruit well with flour. Combine egg, milk and shortening. Add liquid to flour mixture, stirring only until flour is moistened. Use greased muffing pans and bake in a hot oven at 425 degrees for 20 to 25 minutes until lightly browned.
