Cranberry Pot Roast
4 pound beef pot roast
1/4 cup flour
1 1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. drippings
2 cups cranberries
1 1/4 cups water
8 whole cloves
2 sticks cinnamon
3 Tbsp. sugar
3 Tbsp. flour
1/3 cup water
Mix flour, salt and pepper. Dredge meat in flour. Brown well on both sides in hot drippings. Boil together water and cranberries until skins pop. Pour over meat and add spices. Cover and cook at 300 degrees for 3 hours. Strain liquid. Add sugar, 3 Tbsp. flour and water and cook until thickened. Serve as gravy.
